Italian Pignoli Cookies
1/2 pound of almond paste
1 cup of white sugar
2 egg whites
¼ cup of pine nuts
1 Use a pastry chopper (or food processor) to break the almond paste into a granulated form.
2 Place in glass and gradually add sugar.
3 In another small bowl, beat the whites until firm.
4 Fold the egg whites into the sugar paste mixture / almonds gently.
5 On a greased and floured baking sheet, pour a tablespoon of the mixture.
6 Press the pine nuts on top of the cookie (you should cover the top with nuts).
7 Bake at 325 degrees F (170 degrees C) for 10-12 minutes.
8 Let cool on a rack.
